If you like to know the "science" behind why one cooking technique works over another technique and want to know the best way to cook something, I highly recommend "Cook's Illustrated" Magazine. No advertising. Just articles that take take a topic -- try several ways of doing it, explains why the way recommended is the best. Also, when they review products or appliances, you get the straight scoop.
